Shankarpali


Shankarpali as it is called in konkani is a very easy-to-make home made crispy snack.This is made in almost every goan home during diwali along with other sweets - as diwalicho faral :-)
This can be made namkeen as well in which case there will be no sugar but instead other ingredients, I shall post that version as well.So till then enjoy these small and sweet delights which get over in no time..believe me :-)


Ingredients -
1 cup milk
3/4th cup sugar(powdered sugar can also be used)
3/4th cup ghee
salt
all purpose flour (maida)
oil for deep frying


Method-
Mix the milk with sugar.The sugar quantity can be increased if you have a sweet tooth.
Add ghee.Best if home made ghee (tup in konkani) is used :p.
Add a pinch of salt to it.
Now start adding the flour little by little till a consistent dough is formed.(like the one used to make roti)
Knead the dough well.
Spread it like a roti with the help of a rolling pin(the thinner the better)                                    
Then cut it into diamond shape pieces with the help of a pizza cutter or chinne - as it is called in konkani.(check the photo of chinne alongside the dough)                                                
Deep fry the shankarpalis in oil.(till light brown)
Let them cool and then store in an air tight container.
Shankarpalis will become crispy once they cool down.
