This chicken dish is very simple in the literal sense.There is no much hazard in the cooking process and gets done within no time actually :P It is cooked with very less oil, as the curd marination helps.So there is no much oil or masala,which in turn makes it very healthy too.Do give it a try..
Ingredients-
chicken
curd
ginger garlic paste
black pepper powder
onion
green chillies
kasturi methi leaves
salt
oil
Method -
Wash the chicken well and marinate it for 1-2 hours with the following -curd,ginger-garlic paste,salt and black pepper powder.
I generally make fresh paste of ginger-garlic,but you can use the ready made ones also.
Wash the methi leaves and soak them in water for around 15-20min.
Heat little oil in a pan.
Put in the chopped onion and chillies.
Saute for a while.
Add the marinated chicken.
Adjust salt as per taste.
Sprinkle in the methi leaves and let it cook till the chicken gets tender.
Serve hot kasturi chicken with roti/phulkas :)
We normally prepare the lucknowi style biryani at home.But always wanted to try out the hyderabi style.In this the chicken is cooked along with the rice.Hence it is also sometimes called as Kachhi biryani.This recipe is quite simple only with some preparation for the marinade.Rest you don't need to do anything,just the dum cooking does it all..:)
Ingredients -
chicken
ginger garlic paste
curd
garam masala
coriander/dhaniya powder
cumin/jeera powder
turmeric/haldi powder
red chilly/mirchi powder
salt
coriander leaves/dhaniya patta
mint leaves/pudina
oil
onion
basmati rice
Method -
Wash the chicken.
Marinate the chicken with the following for around 3-4 hours-hung curd,ginger garlic paste,garam masala powder,haldi,mirchi,dhaniya,jeera powder,dhaniya patta and pudina.
Cook the basmati rice half done with some whole garam masala(elaichi,dalchini,laung).
Heat oil in a non-stick pan.
Fry some chopped onion till brown.
Once done remove the onion and keep them aside.
Now layer the half done rice,fried onions,then the marinated chicken,again the rice and so on.
You can add whole slited green chillies in between.
On the top layer add a lemon wedge.This gives a nice tangy taste.
Cover the pan and cook it on sim for around 45min.
Cut through the layers and serve hot biryani with raita :)
Chicken soup is one of the best home made remedies for everyone right from children to adults in case of common cold or congestion.It is a very delicious soup which all will definitely love to have may it be on a rainy day or winters or when you have cold.I had prepared this soup for my toddler when he was down with cold and he enjoyed it to the fullest :)
Ingredients-
chicken pieces(2-3)
onion(1medium)
garlic(2-3 cloves)
potatoes(1medium)
black pepper powder
bay leaf(1)
green cardamom(elaichi)(2-3)
salt
butter
oil
Method-
Wash the chicken well.
Chop onion and garlic finely.
Heat a non stick kadai.
Add some butter and oil.Adding oil to the butter will take care that the butter does not get burnt.
Add the bay leaf and elaichi.
Now put in the chopped onion and garlic and saute.
After a while add the chicken pieces,potato cubes and let it cook.Add salt as per taste.
Cover and cook for some 5-7 minutes.
Now add plenty of water so that the chicken and potatoes get well cooked.
Remove the leaf and elaichi before serving.Add a pinch of pepper powder and butter if required
Hot chicken soup is ready to serve :)
This recipe was lying in the drafts section for weeks or probably months ! I was so occupied with my work in office and baby at home that I could not get the time to post/blog.So finally I decided that I have to FIND time to invest in my passion :) So here it is -a simple and delicious chicken sausage recipe.This would hardly take you any time as you get the sausage ready.
Ingredients -
chicken sausage
tomato
black pepper
salt
eggs
oil
Method -
Chop the sausage into small bite-size pieces.
Heat oil in a non-stick pan.
Fry the chicken pieces on both sides till golden brown.
Chop tomatoes roughly(not small pieces).
Add the chopped tomatoes and fry.
Adjust the salt and black pepper as per taste.
Keep in mind the chicken sausage already has some seasoning.
Now remove the sausage and tomato into a bowl.
Scramble one or more eggs into the pan with required seasoning.
Now mix together the sausage and egg.
Delicious chicken sausage with scrambled egg is ready to serve :)

Chicken tikka is famous all over the world.It is traditionally made by baking chicken pieces using skewers in a tandoor-which is a clay-based oven.In some places it is also grilled over red hot coal...I made these tikkas in our microwave with grill option and it was simply delicious :)
Ingredients -
boneless chicken (200gm)
lemon juice(2-3 tspns)
red chilly powder(1-2 tspns)
salt
curd(1 tspn)
ginger-garlic paste
turmeric powder
coriander powder
cumin powder
garam masala powder
oil
Method -
Wash and chop the chicken to small pieces.
Mix together lemon juice,red chilly powder and salt.
Apply this first marinade to the chicken.
Now mix the following ingredients to make the second marinade : oil(1tspn),curd,ginger-garlic paste,turmeric powder,red chilly powder,coriander powder,cumin powder,garam masala powder and salt.Apply it to the chicken.
Refrigerate it for 5-6 hours or overnight.
Preheat the microwave to 180deg.
Sprinkle some oil on the chicken.
Grease the grill stand with oil.Keep the chicken on the stand.
Set the grill option for 10min.
Turn the chicken pieces on the other side,sprinkle oil and again grill for 10min.
Serve the grilled tikkas with onion rings and lemon wedges :-)
All of us love to have crispy fried chicken at KFC.Well this is not exactly the same but yes it is very close..and if you can have a similar crispy fried chicken burger at home !! what else would you wish...........well try it out for yourself :)
Ingredients -
chicken breasts(4)
ginger-garlic paste
red chilly powder
turmeric powder(a pinch)
salt
lemon juice
egg(1)
cornflakes(1 cup)
all purpose flour/maida(1 tbspn)
oil for deep frying
burger buns(4)
mayonnaise
lettuce leaves
tomato slices
chips(optional)
Method -
Slice the chicken breasts thinly.
Apply salt,red chilly powder,turmeric powder,ginger-garlic paste and lemon juice to the chicken.
Beat 1 egg in a bowl.
Crush cornflakes lightly with hand and mix 1 tbspn of maida in it.
Dip the chicken in the egg,then roll it in the cornflakes-maida mixture and deep fry till crispy.
Take a burger bun,open it and apply mayonnaise generously on both halves.
Place a lettuce leaf and tomato slice on one half and fried chicken on the other half.
Serve chicken burger with chips or just as is :-)
This is a very easy recipe to enjoy home-made chicken/egg rolls.Needless to say rolls are one of the most favourite snacks :) Generally the rolls we have outside are very tasty but they are also very oily...but in this case you can have these, without worrying about the amount of oil :P
Ingredients -
all purpose flour(maida)
eggs
onion
green chillies
cucumber
sauce - tomato,chilly
chicken sukka
salt
oil
Method -
Beat the eggs in a bowl.
Chop the onions and green chillies finely.
Add the onions,chillies and salt to the eggs.
Keep it aside.
Visit Chicken Sukka recipe to get the details.
Slice some onions and cucumbers thinly and keep it ready.
Add salt to the all purpose flour/maida.
Sprinkle some oil and knead the dough by adding water little by little.
Make balls out of this dough.The size should be like those we do for parathas.
Take one ball and make a roti with the help of a rolling pin.
It should be thin and big enough.
Heat a non-stick pan.
Place the roti on the pan.Cook it on both sides with oil.
Now place a laddle of egg-onion mix in the centre of the roti.Spread it all over the roti as much as you can.It may come out of the roti but that is fine.
Do not turn it and let it be till the egg cooks.
In the meanwhile place a double sheet of paper on a plate.
Remove the roll from the pan and place it on the paper.
Add the chicken sukka on one side of the roll.
Add the salad - chopped onions,cucumbers and green chillies(if you like it hot).
Sprinkle tomato and chilly sauce as per taste.
Roll it covering the rest of the paper.
Delicious egg-chicken roll is ready to serve :-)
Note - Variations can be done to the above recipe for only egg or only chicken rolls.
This is a dry chicken recipe - sukka meaning dry,hence the name.The amount of chilly can be as per taste - this version is spicy and hot as we prefer it :) Chicken sukka can be served as a starter too..

coriander/dhaniya powder

tomato (1 big)
green chillies (5-6)

fresh coriander leaves
Method -
Wash the chicken well and marinate it with salt,turmeric powder,red chilly powder and ginger-garlic paste for atleast 5-6 hours.
Chop the onion,green chillies and tomato finely.
Heat oil in a non-stick pan.
Add the onions and green chillies.
Once onion sautes add the chopped tomatoes.
Add salt and cover and cook for a minute.
Put in the marinated chicken now.
Add coriander cumin powder and garam masala.
Cover and cook till the chicken is soft.
Boneless chicken cooks faster and there is no need to add any water.
Garnish with fresh coriander leaves.
Dry chicken sukka is ready to serve :-)
Note - The chicken pieces shoud be small.If they are big,chop them.
This is Indian style Chicken Chowmein :-) Yes,it is not the typical chowmein which we get in Chinese restaurants.This is our favourite version of chowmein which is full of veggies and the chicken is dry and spicy.So if you have never had this Indianised chowmein then please give it a try and you will realize :-)
Ingredients -
boneless chicken (350gm)
chowmein
veggies - capsicum,beans,carrot
turmeric powder
green chillies
onion (2 medium)
ginger (1 medium piece)
garlic (3-4 cloves)
sauces - tomato,soya,chilly
tomato (1 medium)
ginger-garlic paste
curd/lemon juice
salt
Method -
First prepare the chicken separately.
Chicken preparation -
wash the chicken and marinate it with the following for atleast 5-6 hours -salt,turmeric powder,ginger-garlic paste,curd/lemon juice,green chilly paste.
Heat oil in a non-stick pan.
Chop one onion and add it to the pan.
Once onion sautes add the chopped tomato to it.
Add salt as per taste as salt is already added to the chicken.
Now add the marinated chicken pieces and cover and cook.
Let it cook for about 15-20 min and it should be done.(Since it is boneless chicken it doesn't take much time)
With this the chicken is ready.Keep it aside.
Now chowmein preparation -
The technique to cook the chow without getting it sticky is that -first heat water in a pot.Get the water to a boil.
Now dip the chow in the boiling water for about 2 mniutes.
After 2 min, drain the water and put the chow under cold water.Cold water ensures that the chow will remain free and will not stick.
Once the chow is ready keep it aside and start preparing the veggies.
Heat oil in a non-stick pan.
Add the chopped onion,ginger,garlic to it.
Once it sautes add the chopped green chillies, tomato and salt.
Now add all the veggies finely chopped.
Add salt, turmeric powder and cover and cook till the veggies get soft.
Once the veggies are cooked add the cooked chow to this.
Gently toss the chow with the veggies.This should be done carefully so that you don't break the chow.
Now add the tomato,soya and chilly sauce and toss again.
Cover and cook it for another 5-10 min.
Chicken chowmein is ready to serve :-)
Goan Chicken Xacuti is one of the most famous goan chicken dishes..It is cooked in coconut gravy with a mixture of roasted aromatic spices.It is one of our favourite chicken dishes and if you have not tasted xacuti yet, it is high time you give this a try ! :-)
Ingredients -
Chicken marinade -
500gm chicken
green chillies (5-6)
ginger (1 big piece)
garlic (8-10 cloves)
fresh coriander leaves(2 tbspn)
salt
turmeric (haldi)powder
curd/lemon/vinegar
tomato (1 medium)
Coconut gravy -
onion (1 medium)
fresh coconut grated (1/2 cup)
garlic (5-6 cloves)
oil (1 tspn)
Spice mixture(masala) -
coriander seeds-dhaniya (1/2 tspn)
black pepper seeds-kali mirch (1/2 tsp)
cinnamon - dalchini(1 med stick)
cloves -laung (3-4)
dry red chillies (4-5)
cumin seeds -jeera (1/4 tspn)
fennel seeds - saunf (1/4 tspn)
poppy seeds -khuskhus (1/2 tspn)
Method -
Wash the chicken well.Apply salt and turmeric powder to it.
Make a fine paste of green chillies,ginger,garlic,coriander leaves.
Apply this paste to the chicken.Add either curd or vinegar or lemon juice to this marinated chicken and mix well.Let this marinate for atleast 2 hours.
To make the masala - dry roast - coriander,pepper,cinnamon,cloves.red chillies,cumin,fennel seeds and poppy seeds in a non-stick pan(without oil).
Grind all this to a fine paste.
Chop an onion lengthwise,and garlic cloves.
Put 1 tspn oil in a pan and add the onions,garlic and freshly grated coconut.Mix this on a low flame till a nice aroma comes.
Grind the coconut-onion-garlic to a fine paste.
Take 2 tspn oil in a non-stick pan.Add an onion finely chopped.After the onion sautes, add finely chopped tomato and salt.Add the marinated chicken to this and close the lid and let it cook.Do not add any water.After about 10-15 min, add the spice mix(masala) to the chicken and let it cook.
After some time add the coconut gravy to this and let it cook.
Finally garnish the chicken xacuti with fresh coriander leaves.
Serve it with onions and lemon wedges.It goes well with slice bread or goan pav :-)
